Ingredients

  • 3 pounds red potatoes, halved
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup freshly grated Parmesan
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped parsley leaves

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Get out your baking sheet and cover it with nonstick spray or lightly oil the bottom in an even layer
  3. In a large mixing bowl, add in your halved potatoes
  4. Next, you are going to add olive oil, garlic, thyme, oregano, basil, and parmesan to the bowl
    Season with salt and fresh ground black pepper to your taste preference
  5. Toss all ingredients together and coat completely
  6. Layer seasoned potatoes in an even layer across your prepared baking sheet
    Start off by placing the potatoes skin side up so the potato gets a little crispy
  7. Place baking sheet into the oven and bake for 25-30 minutes
    Flip halfway through to ensure even browning around the entire potato halves
  8. Melt the butter either on the stovetop or microwave for approximately one minute
  9. Pour on top of potatoes, garnish with parsley if desired
  10. ENJOY!
